We’ve got your cookie exchange covered!


Don’t have time to bake for that cookies exchange?  I’ve got the solution for you! These super easy butter cookies require very few ingredients and whip up in no time and best of all they are light and delicious! Enjoy!


  • 2 cups flour
  • 2/3 cups sugar
  • 1/2 teaspoon baking powder
  • 3/4 cup soft butter
  • 1 unbeaten egg
  • 2 teaspoons vanilla
  • Jam or Jelly of your choice



Mix flour, sugar and baking powder in a separate bowl and set aside. In another bowl, mix together the butter, egg and vanilla, once mixed add the dry ingredients and mix until a dough forms. Place on a lightly floured board and divide into 4 parts. Shape each into a roll approximately 3/4″ thick. Place on an un-greased baking sheet 3-4″ apart. Make a depression length wise 1/4″ – 1/2″ deep down the center of each roll with the back of a butter knife. Fill the depression with jam or jelly of your choice (strawberry, blueberry and apricot are some of my favorites for these cookies).

Bake at 350 for 18 minutes or until lightly golden. While still warm, diagonally slice into little bars.
