It’s Passover, and it has me considering ways to satisfy my sweet tooth without flour and grains. Of course, you can enjoy these easy nut butter cookies any time of year. They are a great addition to a cookie tray, and an excellent gluten free pot luck dish. You can make them with any nut butter you like, and they are packed with protein and fiber!
Flourless Nut Butter Cookies
1 cup sugar (any granular kind)
1 cup nut butter (peanut, almond, cashew, go crazy, any kind you like!)
1 tbsp ground flax or chia + 3 tbsp water
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 350*F. Combine all ingredients in a large bowl. Line cookie sheets with parchment or foil. Roll into walnut-sized balls and then cross cross with a fork. Bake for 13 minutes and then allow to cool before storing. They last at least a week in an airtight container.
